Veggie Soup

Homemade veggie soup is one of the best things I make.It’s good for anytime of the year because it’s so hearty. It will keep you warm for the Winter and help keep you lean and healthy for Summer. I love all the chopping and dicing that it takes. It just feels gratifying to put something together and it comes out amazing.

Here is my recipe which is modified from P90X  nutritional guide. IMG_1528[1]

4 Cups of Low Sodium (or unsalted) Chicken Broth

1 Cup of celery (chopped)

2 Cups of Carrots (chopped)

1 Onion (chopped)

2 Red Potatoes (chopped)

4 oz tomato sauce

1tsp garlic (minced)

Fresh Cilantro

Parsley

(I normally add zucchini during the second part, but I did not have any available. It’s a great addition to the soup!)

So, the first part is to chop up all the veggies in approximately the same size. This is to ensure all veggies will be cooked completely at the same time.

Now that you have chopped veggies, add the broth and the veggies to a big pot. Bring this to a boil, and then let simmer at medium-heat for 30 minutes. The aroma of the soup will take over your house, so be prepared!
